Ingredients: 4 cups water, 1 cup red lentils, 2 tomatoes (quartered), 2 large carrots, 2 chopped onions, 4 minced garlic cloves, ½ cube chicken bouillon, ½ tsp salt, ½ tsp black pepper, and a pinch of cumin and coriander.
Directions: In a large pot, add 3 cups of water and all ingredients except the seasoning. Cook for 20 minutes until lentils and vegetables are soft. Let cool, then blend until smooth. Add 1 cup water, salt, pepper, cumin, and coriander, and heat through before serving.
Tomato Soup

Ingredients: 6 large tomatoes, 2 cups chicken broth, 3 minced garlic cloves, 1 large onion, 2 tsp butter, 2 tsp flour, 2 tsp sugar, 1 tsp salt, and a pinch of pepper.
Directions: (Optional) Roast and peel the tomatoes. Combine tomatoes, broth, garlic, and onion in a pot; simmer for 20 minutes. Strain mixture. In the same pot, melt butter, stir in flour, then gradually whisk in the tomato mixture. Add sugar, salt, and pepper to taste, and garnish with basil and cherry tomatoes.
Pumpkin Soup

Ingredients: 1 kg peeled and chopped pumpkin, 1 sliced onion, 2 garlic cloves, 3 cups vegetable stock, 1 cup water, ¾ cup cooking cream, ½ tsp cumin, a pinch of ginger, and salt and pepper.
Directions: Boil pumpkin, onion, garlic, stock, and water until pumpkin is tender (about 10 minutes). Blend until smooth, then stir in cream and seasonings. Serve with a drizzle of cream, pepper, and parsley.
